The Santoku is a Japanese knife whose name means "three uses" which related to the fact that with its 10 degree cutting edge and downward curved tip this knife is perfect for slicing, dicing and mincing. Wusthof's version has a hollow edge design to reduce friction when cutting. More practical than a standard chef's knife, the Santoku can be used for cutting meat, poultry, fish or vegetables.
